This is a recipe for kale greens made in a pressure cooker with turkey bacon. Stir a big handful of the collards into the bacon coating with the bacon grease until they wilt slightly. I have not tested this recipe with mustard greens so it is hard to advise on a cook time but the cook time would need to be greatly reduced. Mustard greens and turnip greens mix well together and have similar cook times but i do not recommend mixing mustard and collard greens. Pretend it is collard greens.

If you eat red meat feel free to substitute the turkey bacon with the real thing. At the end of the cooking time take the pot off the heat. Cook the bacon stirring occasionally until it is browned and crispy about 5 minutes. Lightly sauté the garlic then add the kale. Heat the oil until you just smell the garlic we want it to bubble around the edges but not brown about 2 minutes. My pressure cooker collard greens are cooked in a fraction of the time that it usually takes on the stove and cooking under pressure ensures that they are ready in about 30 minutes. Brown the bacon then add the collards.
