Add about 2 tbsp of tofu ricotta into each stuffed shell and place shells on top of marinara sauce.

Stuff your shells with your eggplant tofu mixture and place in a bed of your favorite marinara in a 9 x 13 in baking dish. Spoon shells with extra marinara sauce and vegan cheese shreds. Pair this with a light. The filling is excellent mild perfectly textured and tasty. Salt and 1 4 tsp pepper and would do that again and left off the cheese in the sauce just sprinkling a bit of parmesan after baking so it looked pretty. Cover shells with the remaining 2 2 5 cups marinara sauce and any leftover tofu ricotta.
