Reduce heat to medium cook the pork flipping every minute until it reaches 135ºf. Rinse the pork chops and pat dry with paper towels. In a large cast iron skillet heat the oil and butter over medium heat. Brown pork chops on both sides about 4 minutes. Directions place a large nonstick skillet over medium heat.
Sprinkle with salt and pepper and reduce heat. Heat the cast iron skillet on the stove over medium high heat for about 2 minutes. Remove pork from skillet. Saute for 3 to 4 minutes. Cook pork in oil 5 to 8 minutes turning once until brown.

Place the pork chops in the skillet and cook for 3 to 5 minutes per side possibly a tad longer depending on how thick they are. Add pork chops and sear 1 minute per side to create a golden crust. Mix wine paprika and garlic and pour over sauerkraut.
