Traditionally southern collard greens are made with pork. Bring to a boil. If you choose to wash and trim your own greens be sure that you rinse them really well to get out any sand or sediment in the leaves. My southern soul food style collard greens are simply the best. Place bacon in a heavy pot and cook over medium high heat turning occasionally until fat begins to render about 5 minutes.

You can make your collard greens with bacon like i will be doing smoked turkey wings ham hocks or even smoked pork neck bones. Cook 8 9 minutes longer or until onion is tender and bacon is crisp.
